Easy Hobo Casserole is a hearty dish that combines meat, vegetables, and cheese for a comforting meal.

- 1 pound ground beef or turkey
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 3 medium potatoes, thinly sliced
- 2 cups carrots, thinly sliced
- 1 can (15 oz) green beans, drained
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 cup shredded cheddar cheese (or cheese blend)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until onion is translucent.
- In a large baking dish, layer the sliced potatoes, carrots, and green beans.
- Spread the meat mixture over the vegetables.
- In a bowl, combine cream of mushroom soup, milk, Italian seasoning, salt, and pepper. Pour over the meat and vegetables.
- Top with shredded cheddar cheese.
- Cover with foil and bake for 1 hour. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
