A simple and flavorful dump and bake dish featuring chicken, rice, and tzatziki sauce.

- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber (for variations)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, combine the rice and chicken broth.
- Place the chicken breasts on top of the rice.
- Drizzle olive oil over the chicken and season with salt and pepper.
- Cover the dish with foil and bake for 30 minutes.
- While the chicken is baking, prepare the tzatziki sauce by mixing yogurt, garlic, cucumber, dill, lemon juice, oregano, and paprika in a bowl.
- After 30 minutes, remove the foil and bake for an additional 15 minutes until chicken is cooked through.
- Serve the chicken over the rice and top with tzatziki sauce.
Notes
- Use skinless thighs for more flavor.
- Replace yogurt with dairy-free version for a lighter dish.
- Experiment with different vegetables for variations.
