  • 1 cup Guava Nectar or Guava Juice (for the batter)
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (for the glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven according to the cake mix instructions.
  2. In a bowl, mix the Strawberry Cake Mix, Guava Nectar, Eggs, and Coconut Oil until well combined.
  3. Pour the batter into a greased cake pan and bake as directed.
  4. While the cake is baking, beat the Cream Cheese, Granulated Sugar, and Vanilla Extract until smooth.
  5. Once the cake cools, spread the Cream Cheese mixture on top.
  6. In a saucepan, combine Guava Nectar, Granulated Sugar, and Cornstarch. Stir in Water to create a slurry.
  7. Heat the mixture until it thickens, then pour it over the cream cheese layer.
  8. Top with Cool Whip and garnish with Sweetened Coconut Flakes.
