- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice (for the batter)
- 3 large Eggs (room temperature)
- 1/2 cup Coconut Oil (melted)
- 8 oz Cream Cheese (room temperature)
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip (thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (for the glaze)
- 1/2 cup Granulated Sugar (for glaze)
- 2 tbsp Cornstarch
- 1/4 cup Water (for slurry)
- 1 cup Sweetened Coconut Flakes (for garnish)
Instructions
- Preheat your oven according to the cake mix instructions.
- In a bowl, mix the Strawberry Cake Mix, Guava Nectar, Eggs, and Coconut Oil until well combined.
- Pour the batter into a greased cake pan and bake as directed.
- While the cake is baking, beat the Cream Cheese, Granulated Sugar, and Vanilla Extract until smooth.
- Once the cake cools, spread the Cream Cheese mixture on top.
- In a saucepan, combine Guava Nectar, Granulated Sugar, and Cornstarch. Stir in Water to create a slurry.
- Heat the mixture until it thickens, then pour it over the cream cheese layer.
- Top with Cool Whip and garnish with Sweetened Coconut Flakes.
