- 2 tablespoons peanut butter
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon dried red chili flakes
- 1/4 teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Slice the cucumbers and sprinkle with salt. Let them sit for 10 minutes.
- In a bowl, whisk together soy sauce, rice vinegar, peanut butter, honey, garlic, chili flakes, and black pepper to make the peanut sauce.
- After 10 minutes, drain excess water from the cucumbers.
- Toss the cucumbers in the peanut sauce until well coated.
- Garnish with toasted peanuts and chopped parsley before serving.
