- 2 cups cooked chicken breast, shredded
- 1 cup shredded cabbage (green or purple)
- 1 cup carrots, julienned
- 1 red bell pepper, thinly sliced
- 2 green onions, sliced
- 4 large tortillas or wraps
- 2 tbsp fresh cilantro, chopped
- 3 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp honey or maple syrup
- 1/4 tsp chili flakes (optional)
- 2–3 tbsp warm water (to thin)
Instructions
- In a bowl, mix the peanut butter, soy sauce, lime juice, honey, chili flakes, and warm water until smooth.
- In a large bowl, combine shredded chicken, cabbage, carrots, red bell pepper, green onions, and cilantro.
- Add the peanut sauce to the chicken mixture and toss to coat.
- Lay out the tortillas and divide the chicken mixture evenly among them.
- Roll the tortillas tightly to form wraps.
- Slice the wraps in half and serve immediately or refrigerate for later.
