Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning

  • to taste pepper
  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach
  • for garnish fresh basil

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add diced onion, minced garlic, chicken broth, diced tomatoes, and Italian seasoning.
  3. Season with salt and pepper to taste.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred the chicken with two forks and return it to the slow cooker.
  6. Stir in heavy cream and Parmesan cheese.
  7. Add tortellini and fresh spinach, cooking for an additional 30 minutes.
  8. Serve hot, garnished with fresh basil.

  • This soup can be made ahead and stored in the fridge.
