- 1.5 pounds boneless, skinless chicken breasts
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning

- 1 cup tortellini (fresh or frozen)
- 1 cup fresh spinach

Instructions
- Place chicken breasts in the slow cooker.
- Add diced onion, minced garlic, chicken broth, diced tomatoes, and Italian seasoning.
- Season with salt and pepper to taste.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken with two forks and return it to the slow cooker.
- Stir in heavy cream and Parmesan cheese.
- Add tortellini and fresh spinach, cooking for an additional 30 minutes.
- Serve hot, garnished with fresh basil.

- This soup can be made ahead and stored in the fridge.
- Freezing is not recommended due to the cream.
