- 2 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil the diced potatoes until tender.
- Drain and mash the potatoes in a bowl.
- Add cheddar cheese, Parmesan cheese, parsley, butter, salt, and pepper to the mashed potatoes.
- Mix until well combined.
- Form the mixture into small balls.
- Heat oil in a pan over medium heat.
- Fry the potato balls until golden and crispy.
- Remove and let drain on paper towels.
