- 1 pound ditalini pasta, or elbow macaroni pasta
- 1 red bell pepper, chopped
- 2 ribs celery, finely chopped
- 1/2 cup finely chopped red onion
- 1/2 cup chopped sweet pickles
- 3 hard boiled eggs, chopped
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the pasta, red bell pepper, celery, red onion, sweet pickles, and hard boiled eggs.
- In a separate bowl, mix the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper to make the dressing.
- Pour the dressing over the pasta mixture and stir to combine.
- Cover and refrigerate for at least 1 hour before serving.
