A creamy and flavorful pasta dish with chicken and pesto.


Ingredients

  • 8 oz pasta
  • 2 chicken breasts, sliced lengthwise
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup pesto
  • 1/2 tsp lemon juice
  • 1/4 cup sun-dried tomatoes
  • 2 cups fresh baby spinach
  • freshly grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced chicken breasts, garlic powder, salt, and pepper. Cook until chicken is browned and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, melt butter and whisk in flour until smooth.
  6. Gradually add chicken broth, stirring constantly until thickened.
  7. Stir in heavy cream, pesto, lemon juice, and sun-dried tomatoes. Cook for 2-3 minutes.
  8. Add cooked pasta, chicken, and spinach. Toss to combine.
  9. Serve topped with Parmesan cheese if desired.
