Ingredients

- 8 oz pasta
- 2 chicken breasts, sliced lengthwise
- 1/2 tsp garlic powder
- salt and pepper, to taste
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/4 cup pesto
- 1/2 tsp lemon juice
- 1/4 cup sun-dried tomatoes
- 2 cups fresh baby spinach
- freshly grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add sliced chicken breasts, garlic powder, salt, and pepper. Cook until chicken is browned and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, melt butter and whisk in flour until smooth.
- Gradually add chicken broth, stirring constantly until thickened.
- Stir in heavy cream, pesto, lemon juice, and sun-dried tomatoes. Cook for 2-3 minutes.
- Add cooked pasta, chicken, and spinach. Toss to combine.
- Serve topped with Parmesan cheese if desired.

- Adjust seasoning to your taste.
- Substitute heavy cream with a lighter alternative if preferred.
