- 9 lasagna noodles
- 2 cups cooked, shredded chicken breast
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 4 cups milk
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add spinach and cooked chicken to the skillet, mix well.
- In a saucepan, melt butter. Stir in flour and cook for 1 minute.
- Gradually add milk, whisking until smooth. Cook until thickened.
- Add nutmeg, salt, and pepper to the sauce.
- In a baking dish, spread a layer of the white sauce, then a layer of lasagna noodles, followed by chicken mixture and cheeses. Repeat layers.
- Top with remaining sauce and mozzarella cheese.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
