- 250g (8 oz) penne pasta (or your favorite pasta shape)
- 2 chicken breasts, cut into small bite-sized pieces
- 1 tbsp Cajun seasoning (or more if you like it spicy!)
- 1 tbsp butter
- 1 tbsp cooking oil
- Salt & black pepper, to taste
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced (you can also use green and yellow, or a combination of colors)
- ½ cup white wine (or chicken broth)
- 1 cup double cream (heavy cream)
- ½ cup grated parmesan
- Fresh parsley, for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat butter and cooking oil over medium heat.
- Add the diced onion and garlic. Sauté until translucent.
- Add chicken pieces and Cajun seasoning. Cook until chicken is browned and cooked through.
- Add sliced bell pepper and cook for a few minutes until tender.
- Pour in white wine (or chicken broth) and let it simmer for a couple of minutes.
- Stir in the double cream and grated parmesan. Mix well until combined.
- Add the cooked pasta to the skillet and toss to coat.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- Adjust the amount of Cajun seasoning based on your spice preference.
- Feel free to add other vegetables like spinach or mushrooms.
- Serve immediately for the best texture.
