- 6–8 chicken drumsticks or thighs (bone-in, skin-on)
- 2 tablespoons olive oil or butter
- Salt and black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme or parsley
- 1 ½ cups sliced mushrooms
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup chicken broth
- ½ cup heavy cream
- 1 teaspoon Dijon mustard (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, toss chicken with olive oil, salt, pepper, garlic powder, onion powder, and thyme or parsley.
- Place the chicken in a baking dish.
- In another bowl, mix mushrooms, green bell pepper, and minced garlic.
- Spread the vegetable mixture over the chicken.
- In a separate bowl, combine cream of mushroom soup, chicken broth, heavy cream, and Dijon mustard.
- Pour the sauce over the chicken and vegetables.
- Bake for 45-55 minutes or until chicken is cooked through.
- Let it rest for 5 minutes before serving.

- Serve with rice or crusty bread to soak up the sauce.
