- ½ teaspoon vanilla extract optional
- ½ teaspoon lemon zest optional
- ½ cup fresh blueberries
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg whites and yolks into two different bowls.
- Add cream of tartar to the egg whites and beat until stiff peaks form.
- In another bowl, mix the blended cottage cheese, egg yolks, cornstarch, powdered sweetener, vanilla extract, and lemon zest until smooth.
- Gently fold the egg whites into the cottage cheese mixture.
- Carefully fold in the blueberries.
- Spoon the mixture onto the prepared baking sheet in small mounds.
- Bake for 25-30 minutes or until golden and set.
- Let cool slightly before serving.
