Description

A rich and creamy cheesecake with the flavors of Cinnamon Toast Crunch.

  • 4 tablespoons unsalted butter melted
  • 45 cups boiling water for the water bath used when baking the cheesecake

  • 1 cup cinnamon toast crunch cereal
  • 32 ounces (4 – 8-ounce) blocks full-fat cream cheese softened to room temperature
  • 1½ cups granulated sugar
  • 1 tablespoon vanilla extract
  • 6 large eggs room temperature
  • White Chocolate Ganache
  • 1 cup white chocolate chips Ghirardelli brand
  • ¼ cup heavy cream
  • Garnish
  • 6 ounces whipped topping thawed
  • 1 cup cinnamon toast crunch cereal lightly crushed into smaller pieces

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, cinnamon toast crunch crumbs, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, and mix until combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Fold in heavy cream and cinnamon toast crunch cereal.
  8. Pour the cheesecake batter over the crust.
  9. Place the springform pan in a larger pan and fill the outer pan with boiling water.
  10. Bake for 60-70 minutes or until the center is set.
  11. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours.
  12. For the ganache, heat heavy cream in a saucepan, then pour over white chocolate chips and stir until smooth.
  13. Spread the ganache over the chilled cheesecake.
  14. Top with whipped topping and crushed cinnamon toast crunch cereal before serving.
