  • ¾ cup whole milk ricotta cheese
  • ½ cup breadcrumbs
  • ¼ cup milk
  • ⅓ cup freshly grated Parmesan cheese
  • 1 large egg
  • ¼ cup fresh parsley finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1½ cups heavy cream
  • 2 cups baby spinach
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, ricotta, breadcrumbs, milk, Parmesan, egg, parsley, garlic, Italian seasoning, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake meatballs for 20-25 minutes or until cooked through.
  5. In a skillet, melt butter over medium heat and sauté minced garlic until fragrant.
  6. Add heavy cream and bring to a simmer.
  7. Stir in spinach and cook until wilted.
  8. Add Parmesan cheese, salt, and pepper, stirring until smooth.
  9. Combine meatballs with the spinach Alfredo sauce and serve.
