Ingredients

  • 1.5 lbs chicken breast boneless, skinless
  • 2 limes juice and zest, about ⅓ cup
  • 2 tablespoon olive oil
  • 2 tablespoon cilantro chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon honey
  • to taste salt
  • to taste pepper
  • 2 cups quinoa cooked (from 1 cup dry quinoa)
  • 2 cups greens Romaine or butter lettuce
  • 1 cup black beans canned, rinsed and drained
  • 1 cup corn fresh or frozen, thawed
  • 1 cup cherry tomatoes halved
  • ¼ cup cilantro for garnish
  • optional toppings avocado, lime wedges, Greek yogurt

Instructions

  1. Marinate the chicken with lime juice, olive oil, cilantro, chili powder, cumin, honey, salt, and pepper for at least 30 minutes.
  2. Cook quinoa according to package instructions and set aside.
  3. Grill or pan-sear the marinated chicken until cooked through, then slice.
  4. In a bowl, layer the cooked quinoa, greens, black beans, corn, cherry tomatoes, and sliced chicken.
  5. Garnish with cilantro and add optional toppings if desired.
