Description
A delicious low-carb pizza with a chicken crust and topped with Caesar salad.
Ingredients

- 1 lb ground chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tsp dried Italian herbs (oregano, basil)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
- 2 cups romaine lettuce, chopped
- 1/4 cup Caesar dressing (preferably creamy)
- 1/4 cup grated Parmesan cheese
- 1/2 cup cooked chicken pieces, seasoned and crisped or chicken bacon bits (optional)
- Freshly ground black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground chicken, mozzarella, Parmesan, egg, Italian herbs, garlic powder, salt, and pepper.
- Mix until well combined.
- Press the chicken mixture onto a baking sheet lined with parchment paper to form a pizza crust.
- Drizzle olive oil over the crust.
- Bake for 20-25 minutes or until golden brown.
- Remove from oven and let cool slightly.
- Top with chopped romaine, Caesar dressing, and additional Parmesan cheese.
- Add cooked chicken pieces or bacon bits if desired.
- Season with black pepper to taste and serve.
Notes
- For a crispier crust, bake a bit longer.
- Use rotisserie chicken for convenience.
