Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/2 cup pineapple juice
  • 1 tablespoon lime juice
  • 2 cups fresh pineapple, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges
  • 4 tortillas (corn or flour)

Instructions

  1. In a bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, oregano, cinnamon, salt, and pepper.
  2. Add pineapple juice and lime juice to the marinade and mix well.
  3. Place chicken breasts in the marinade and let sit for at least 30 minutes.
  4. Heat a grill or skillet over medium-high heat.
  5. Cook chicken for 6-7 minutes per side or until fully cooked.
  6. Remove chicken and let it rest for a few minutes before slicing.
  7. In a separate pan, sauté red onion until soft.
  8. Serve chicken in tortillas topped with diced pineapple, sautéed onions, and cilantro.
  9. Garnish with lime wedges.
