Description
A refreshing pasta salad with cherry tomatoes, mozzarella, and basil, topped with crunchy croutons.
Ingredients

- 1/2 lb. mafalde corta or lasagnette pasta
- 1/4 cup extra virgin olive oil
- 6 garlic cloves, minced
- 2 pints cherry tomatoes, halved or quartered
- 1/4 cup white wine vinegar
- 1/2 tbsp. oregano
- Salt & pepper to taste
- 1 cup mozzarella pearls
- 1/3 cup basil chiffonade
- 1 cup toasted sourdough croutons
- 1 cup Parmigiano Reggiano, grated
- Balsamic glaze
- 3–4 slices sourdough bread for croutons
- 1 tbsp. extra virgin olive oil for croutons
- Salt to taste for croutons
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large bowl, combine olive oil, minced garlic, cherry tomatoes, white wine vinegar, oregano, salt, and pepper.
- Add the cooked pasta to the bowl and mix well.
- Fold in mozzarella pearls, basil chiffonade, and croutons.
- Sprinkle with Parmigiano Reggiano and drizzle with balsamic glaze before serving.
- For croutons, preheat oven to 350°F (175°C). Cut sourdough bread into cubes and toss with olive oil and salt.
- Spread on a baking sheet and toast in the oven until golden brown.
