Description

Caramel Cheesecake Cookies are soft cookies filled with a creamy cheesecake center and topped with rich caramel.


Ingredients

  • 8 oz (226g) cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine salt
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • Optional: 2–3 tablespoons granulated sugar for rolling
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cream cheese, ¼ cup sugar, and 1 teaspoon vanilla until smooth. Set aside.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  4. In a large bowl, beat softened butter, ¾ cup granulated sugar, and brown sugar until fluffy.
  5. Add the egg and 2 teaspoons vanilla to the butter mixture. Mix well.
  6. Gradually add the dry ingredients to the wet mixture. Mix until combined.
  7. Take a tablespoon of dough, flatten it, and place a teaspoon of cream cheese filling in the center. Fold the dough around the filling and roll into a ball.
  8. Roll the cookie ball in granulated sugar if desired.
  9. Place the cookies on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes until the edges are golden.
  11. Once cooled, drizzle caramel sauce on top.
