Caramel Cheesecake Cookies are soft cookies filled with a creamy cheesecake center and topped with rich caramel.
Ingredients

- 8 oz (226g) cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon fine salt
- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ cup light brown sugar, packed
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- Optional: 2–3 tablespoons granulated sugar for rolling
- ½ cup caramel sauce (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cream cheese, ¼ cup sugar, and 1 teaspoon vanilla until smooth. Set aside.
- In another bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, beat softened butter, ¾ cup granulated sugar, and brown sugar until fluffy.
- Add the egg and 2 teaspoons vanilla to the butter mixture. Mix well.
- Gradually add the dry ingredients to the wet mixture. Mix until combined.
- Take a tablespoon of dough, flatten it, and place a teaspoon of cream cheese filling in the center. Fold the dough around the filling and roll into a ball.
- Roll the cookie ball in granulated sugar if desired.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden.
- Once cooled, drizzle caramel sauce on top.
Notes
- Store cookies in an airtight container.
- Refrigerate any leftover cream cheese filling.
- Use homemade caramel for a richer flavor.
