Description

A spicy and creamy Cajun white chicken chili that warms you up.


Ingredients

  • 2 large chicken breasts (or thighs)
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper; sauté until soft.
  3. Add chicken and cook until browned.
  4. Stir in jalapeño and Cajun seasoning; cook for 1 minute.
  5. Add chicken broth and white beans; bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Add cream cheese, heavy cream, lime juice, and cilantro; stir until smooth.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • Adjust spice level by adding more or less jalapeño.
  • Use leftover chicken for quicker preparation.
  • Can be topped with additional cilantro or lime slices.
