Description
A spicy and creamy Cajun white chicken chili that warms you up.
Ingredients

- 2 large chicken breasts (or thighs)
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 0.5 cup heavy cream
- 1 tablespoon lime juice
- 0.25 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper; sauté until soft.
- Add chicken and cook until browned.
- Stir in jalapeño and Cajun seasoning; cook for 1 minute.
- Add chicken broth and white beans; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add cream cheese, heavy cream, lime juice, and cilantro; stir until smooth.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- Adjust spice level by adding more or less jalapeño.
- Use leftover chicken for quicker preparation.
- Can be topped with additional cilantro or lime slices.
