  • 1 tablespoon olive oil
  • ½ sweet onion, minced
  • 4 ribs celery, small dice
  • 2 hard boiled eggs, small dice
  • 2 teaspoons Cajun seasoning preferably no salt blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon freshly cracked black pepper
  • ½ teaspoon cayenne pepper, optional
  • 1½ cups good quality mayonnaise
  • 3 tablespoons Creole mustard
  • 3 tablespoons red wine vinegar
  • ½ lemon, juiced
  • 1 teaspoon hot sauce
  • Kosher salt and freshly cracked black pepper
  • Chopped fresh parsley, for garnish
  • Sliced hard boiled egg, for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the olive oil, minced onion, diced celery, and diced hard boiled eggs.
  3. Add the Cajun seasoning, smoked paprika, black pepper, cayenne pepper, mayonnaise, Creole mustard, red wine vinegar, lemon juice, and hot sauce. Mix well.
  4. Fold in the cooked macaroni until fully coated.
  5. Season with kosher salt and additional black pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Garnish with chopped parsley and sliced hard boiled egg if desired.
