Description
A tangy and spicy pickled Brussels sprout dish with a Cajun twist.
Ingredients

- 2 cups Brussels sprouts (small, whole or halved)
- 1/2 cup sliced jalapeños
- 2 cloves garlic, smashed
- 1 1/2 cups white vinegar
- 1/2 cup water
- 1/3 cup sugar
- 1 tbsp Cajun seasoning
- 1 tsp mustard seeds
- 1/2 tsp black peppercorns
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- Fresh thyme or dill sprigs
Instructions
- Prepare the Brussels sprouts by trimming the ends and halving them if large.
- In a pot, combine vinegar, water, sugar, Cajun seasoning, mustard seeds, black peppercorns, red pepper flakes, and salt.
- Bring the mixture to a boil, stirring until the sugar dissolves.
- Add the Brussels sprouts, jalapeños, and garlic to the pot.
- Remove from heat and let the mixture cool for 10 minutes.
- Transfer to a jar and add fresh thyme or dill sprigs.
- Seal the jar and refrigerate for at least 24 hours before serving.
Notes
- These can be made a week in advance for better flavor.
- Adjust the spice level by modifying the amount of jalapeños and red pepper flakes.
- Serve as a side dish or snack.
