Description

A tangy and spicy pickled Brussels sprout dish with a Cajun twist.


Ingredients

  • 2 cups Brussels sprouts (small, whole or halved)
  • 1/2 cup sliced jalapeños
  • 2 cloves garlic, smashed
  • 1 1/2 cups white vinegar
  • 1/2 cup water
  • 1/3 cup sugar
  • 1 tbsp Cajun seasoning
  • 1 tsp mustard seeds
  • 1/2 tsp black peppercorns
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • Fresh thyme or dill sprigs

Instructions

  1. Prepare the Brussels sprouts by trimming the ends and halving them if large.
  2. In a pot, combine vinegar, water, sugar, Cajun seasoning, mustard seeds, black peppercorns, red pepper flakes, and salt.
  3. Bring the mixture to a boil, stirring until the sugar dissolves.
  4. Add the Brussels sprouts, jalapeños, and garlic to the pot.
  5. Remove from heat and let the mixture cool for 10 minutes.
  6. Transfer to a jar and add fresh thyme or dill sprigs.
  7. Seal the jar and refrigerate for at least 24 hours before serving.

Notes

  • These can be made a week in advance for better flavor.
  • Adjust the spice level by modifying the amount of jalapeños and red pepper flakes.
