- ½ cup brown sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp salt
- 1 cup chopped pecans
- ½ cup brown sugar
- ¼ cup corn syrup or maple syrup
- 1 egg
- 1 tsp vanilla extract
- ¼ tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and brown sugar until smooth.
- Add the egg yolk and vanilla extract; mix well.
- Gradually add the flour and salt; stir until combined.
- In another bowl, mix the pecan filling ingredients until well combined.
- Form the cookie dough into small balls and place them on a baking sheet.
- Make a small indentation in the center of each ball.
- Fill each indentation with the pecan filling.
- Bake for 12-15 minutes until cookies are lightly golden.
- Allow to cool before serving.
