A hearty bowl of steak, butternut squash, and herbs.


Ingredients

  • 1 medium butternut squash (about 2 cups cubed)
  • 1 lb sirloin or ribeye steak
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh rosemary (chopped)
  • 2 sprigs fresh thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the butternut squash.
  3. Toss squash with olive oil, salt, and pepper.
  4. Spread squash on a baking sheet and roast for 25-30 minutes until tender.
  5. Season the steak with salt and pepper.
  6. Heat a skillet over medium-high heat.
  7. Add steak and sear for 4-5 minutes on each side for medium-rare.
  8. Add garlic, rosemary, and thyme to the skillet during the last minute of cooking.
  9. Remove steak from skillet and let it rest for 5 minutes.
  10. Slice steak and serve over roasted butternut squash.

Notes

  • Adjust cooking time for steak based on your preferred doneness.
  • For added flavor, marinate the steak beforehand.
