A hearty bowl of steak, butternut squash, and herbs.
Ingredients

- 1 medium butternut squash (about 2 cups cubed)
- 1 lb sirloin or ribeye steak
- 4 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- 2 sprigs fresh rosemary (chopped)
- 2 sprigs fresh thyme (chopped)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube the butternut squash.
- Toss squash with olive oil, salt, and pepper.
- Spread squash on a baking sheet and roast for 25-30 minutes until tender.
- Season the steak with salt and pepper.
- Heat a skillet over medium-high heat.
- Add steak and sear for 4-5 minutes on each side for medium-rare.
- Add garlic, rosemary, and thyme to the skillet during the last minute of cooking.
- Remove steak from skillet and let it rest for 5 minutes.
- Slice steak and serve over roasted butternut squash.
Notes
- Adjust cooking time for steak based on your preferred doneness.
- For added flavor, marinate the steak beforehand.
