Description

This dish features tender chicken pieces coated in a sweet and tangy brown sugar pineapple sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 can (20 oz) pineapple chunks with juice (do not drain)
  • 1/2 cup brown sugar (light or dark)
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp ground ginger (or 1 tbsp fresh grated)
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Red pepper flakes (optional)
  • Chopped green onions (optional garnish)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken chunks, season with salt and pepper, and cook until browned.
  3. In a bowl, mix pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, and garlic powder.
  4. Pour the sauce over the chicken in the pan.
  5. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  6. Mix cornstarch with a little water and stir into the sauce to thicken.
  7. Serve hot, garnished with green onions and red pepper flakes if desired.

Notes

  • Adjust sweetness by varying brown sugar quantity.
  • For more heat, add extra red pepper flakes.
