- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1 can (20 oz) pineapple chunks with juice (do not drain)
- 1/2 cup brown sugar (light or dark)
- 1/3 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp ground ginger (or 1 tbsp fresh grated)
- 1 tbsp cornstarch
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- Red pepper flakes (optional)
- Chopped green onions (optional garnish)
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken chunks, season with salt and pepper, and cook until browned.
- In a bowl, mix pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, and garlic powder.
- Pour the sauce over the chicken in the pan.
- Bring to a boil, then reduce heat and simmer for 10-15 minutes.
- Mix cornstarch with a little water and stir into the sauce to thicken.
- Serve hot, garnished with green onions and red pepper flakes if desired.
Notes
- Adjust sweetness by varying brown sugar quantity.
- For more heat, add extra red pepper flakes.
- This dish pairs well with rice or noodles.
