Description
These blueberry biscuits have a light texture and a sweet lemon glaze.
Ingredients

- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2–3 tbsp granulated sugar
- 1/2 tsp salt
- 1/2 cup (1 stick) cold butter, cubed
- 1 cup blueberries (fresh or frozen, tossed in 1 tsp flour if frozen)
- 3/4 cup cold milk (or buttermilk for tang)
- 1 cup powdered sugar
- 1–2 tbsp fresh lemon juice
- Splash of water or milk (as needed for glaze consistency)
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix flour, baking powder, sugar, and salt.
- Add cold butter and mix until crumbly.
- Fold in blueberries gently.
- Pour in cold milk and stir until just combined.
- Turn the dough onto a floured surface and knead gently.
- Roll or pat the dough to about 1-inch thick.
- Cut into rounds and place on a baking sheet.
- Bake for 15-20 minutes or until golden.
- For the glaze, mix powdered sugar, lemon juice, and water or milk until smooth.
- Drizzle glaze over warm biscuits.
Notes
- Use fresh blueberries for best results.
- Adjust sugar based on your taste preference.
- Store leftovers in an airtight container.
