- For the Banana Filling:
- 4 ripe bananas, sliced
- 1 tablespoon butter
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon dark rum (optional)
- Pinch of salt
- For the Cobbler Topping:
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ¾ cup granulated sugar
- ½ teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- ½ cup buttermilk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat.
- Add sliced bananas, brown sugar, vanilla extract, cinnamon, nutmeg, rum, and salt. Cook until bananas are softened.
- In a bowl, mix flour, baking powder, sugar, and salt for the topping.
- Add cubed butter and mix until crumbly.
- Stir in buttermilk and vanilla extract until combined.
- Spread the banana mixture in a baking dish.
- Drop spoonfuls of the cobbler topping over the bananas.
- Bake for 30-35 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Serve warm with ice cream for added indulgence.
- Dark rum enhances the flavor but can be omitted.
- Store leftovers in the refrigerator.
