Ingredients

- 2 ripe bananas (mashed)
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup oat flour
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed bananas, Greek yogurt, honey or maple syrup, egg, and vanilla extract.
- In another bowl, combine the oat flour, cinnamon, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Line a muffin tin with paper liners or grease it.
- Fill each muffin cup with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool before serving.
Notes
- Use ripe bananas for the best flavor.
- Store leftovers in an airtight container.
