  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • ½ teaspoon fresh grated ginger
  • ½ teaspoon chili flakes (optional, adjust to taste)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Steamed jasmine rice or rice noodles (optional)
  • Sliced green onions (optional)
  • Toasted sesame seeds (optional)
  • Fresh cilantro or Thai basil (optional)
  • Lime wedges (optional)

Instructions

  1. Heat olive oil or sesame oil in a pan over medium heat.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. Add the chicken to the pan and cook until browned and cooked through, about 7-10 minutes.
  4. In a separate bowl, combine mango, soy sauce, honey, rice vinegar, garlic, ginger, and chili flakes.
  5. Pour the mango mixture over the chicken in the pan.
  6. Bring to a simmer and cook for 2-3 minutes.
  7. Stir in the cornstarch mixture to thicken the sauce.
  8. Cook for another minute until the sauce is thickened.
  9. Serve the chicken over steamed rice or noodles, garnished with green onions, sesame seeds, cilantro, and lime wedges if desired.
