Ingredients

- 1 small head of green cabbage, finely shredded
- 1 small head of purple cabbage, finely shredded
- 2 carrots, grated
- 1 red bell pepper, thinly sliced
- 3 green onions, chopped
- 1/2 cup cilantro leaves, chopped
- 1/4 cup sesame seeds, toasted
- 1/2 cup rice vinegar
- 1/3 cup soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons sugar
- 1 teaspoon garlic, minced
- 1 teaspoon fresh ginger, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine green cabbage, purple cabbage, carrots, red bell pepper, green onions, cilantro, and sesame seeds.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic, ginger, salt, and pepper.
- Pour the dressing over the cabbage mixture.
- Toss everything together until well combined.
- Let it sit for 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
Notes
- This slaw can be made a few hours in advance for better flavor.
- Adjust the sugar based on your taste preference.
- Add sliced almonds for extra crunch if desired.
