Delicious apple crumble cupcakes with a crunchy topping.

- For the Crumble Topping:
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup cold unsalted butter, cut into small cubes
- For the Apple Filling:
- 3 medium apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon all-purpose flour
- For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or plain yogurt
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a cupcake pan with liners.
- In a bowl, mix the crumble topping ingredients until crumbly. Set aside.
- In another bowl, combine the apple filling ingredients.
- In a large bowl, whisk together the cupcake ingredients until smooth.
- Spoon the cupcake batter into the liners, filling them halfway.
- Add a spoonful of apple filling on top of the batter in each liner.
- Top with crumble mixture.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- Use your favorite apple varieties for different flavors.
- Store leftovers in an airtight container.
- For extra flavor, add a pinch of salt to the apple filling.
