Delicious apple crumble cupcakes with a crunchy topping.

  • For the Crumble Topping:
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup cold unsalted butter, cut into small cubes
  • For the Apple Filling:
  • 3 medium apples, peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • For the Cupcakes:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a cupcake pan with liners.
  3. In a bowl, mix the crumble topping ingredients until crumbly. Set aside.
  4. In another bowl, combine the apple filling ingredients.
  5. In a large bowl, whisk together the cupcake ingredients until smooth.
  6. Spoon the cupcake batter into the liners, filling them halfway.
  7. Add a spoonful of apple filling on top of the batter in each liner.
  8. Top with crumble mixture.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.

Notes

  • Use your favorite apple varieties for different flavors.
  • Store leftovers in an airtight container.
  • For extra flavor, add a pinch of salt to the apple filling.
