  • 3 tbsp all-purpose flour
  • 1 chopped sweet onion
  • 3 cups chicken stock
  • 1 tsp sugar
  • 2 tbsp butter
  • 3/4 tsp coarse salt (such as Diamond Crystal kosher salt)
  • 1 (11 oz) packet cheddar bay biscuit mix
  • 2 tbsp butter (melted for brushing)

Instructions

  1. In a large pot, melt 2 tbsp butter over medium heat. Add chopped onion and sauté until translucent.
  2. Add canned tomatoes, chicken stock, sugar, black pepper, and salt. Bring to a simmer.
  3. Stir in flour and mix until combined. Cook for 10 minutes.
  4. Prepare the cheddar bay dumplings according to package instructions.
  5. Drop dumpling batter into the simmering soup. Cover and cook for 15 minutes.
  6. Brush melted butter over dumplings before serving.
