Ingredients

  • 1 pound breakfast sausage
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste
  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Chopped fresh chives for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cook sausage in a skillet until browned, then set aside.
  3. In the same skillet, melt butter and whisk in flour to make a roux.
  4. Gradually add milk, stirring constantly until gravy thickens.
  5. Season gravy with salt and pepper.
  6. Spread frozen tater tots in a baking dish.
  7. Top with cooked sausage, then pour gravy over.
  8. Bake for 20 minutes.
  9. Remove from oven, make wells for eggs, crack eggs into wells.
  10. Sprinkle cheese over top.
  11. Return to oven for 10-15 minutes until eggs are set.
  12. Garnish with chives if desired.
