- 1 pound lean ground beef
- 1 package (1 oz) taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chiles, with juices
- 2 cups sharp cheddar cheese, grated
- 1 bottle (8 oz) ranch dressing
- 5 packages (15 count each) frozen phyllo cup shells
Instructions
- Preheat oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and diced tomatoes with green chiles to the beef. Stir well.
- Simmer for 5 minutes, then remove from heat.
- Place phyllo cups on a baking sheet.
- Spoon beef mixture into each phyllo cup.
- Top each cup with grated cheddar cheese.
- Bake for 10 minutes or until cheese melts.
- Drizzle with ranch dressing before serving.
Notes
- For extra flavor, add chopped jalapeños.
- Substitute ground turkey for a lighter option.
- Serve immediately for the best texture.
