Ingredients

- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 8 oz brie cheese, sliced or crumbled
- 1 cup fresh or frozen cranberries
- 1/2 cup chopped pecans
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Arrange sweet potato rounds on a baking sheet.
- Drizzle olive oil over sweet potatoes and season with salt and pepper.
- Bake for 20-25 minutes until tender.
- Remove from oven and top each round with brie, cranberries, and pecans.
- Return to oven and bake for an additional 5-10 minutes until cheese is melted.

- Use fresh cranberries for a tart flavor.
- Adjust baking time based on thickness of sweet potato slices.
