- 1 pound sweet maple sausage
- 6 large eggs
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 8 cups cubed day-old bread (such as challah or sourdough)
- 1 cup shredded cheddar cheese
- 1/2 cup maple syrup (plus extra for drizzling)
- 1/2 cup fresh blueberries (optional)
- 1/2 cup chopped fresh pecans (optional)
- Salt and pepper to taste
- Cooking spray or butter (for greasing the baking dish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the sweet maple sausage over medium heat until browned. Drain excess fat.
- In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, salt, and pepper.
- Add the cooked sausage, cubed bread, cheddar cheese, and maple syrup to the egg mixture. Stir to combine.
- Grease a baking dish with cooking spray or butter. Pour the mixture into the dish.
- If using, sprinkle blueberries and pecans on top.
- Bake for 45-50 minutes, or until the casserole is set and golden brown.
- Let it cool for a few minutes before serving. Drizzle with extra maple syrup if desired.

- Use day-old bread for the best texture.
