Description
Stuffed Mashed Potato Nests filled with seasoned ground beef, vegetables, and topped with mozzarella cheese.
Ingredients

- 3–5 large potatoes (enough to yield about 4 cups of mashed potatoes)
- 3.5 tbsp (50g) butter, melted
- A little salt, smoked paprika, black pepper, and oregano, to taste
- Fresh dill, chopped (for garnish)
- 1.1 lbs (500g) ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 large tomato, diced
- 2.5 oz (70g) tomato paste
- A bunch of fresh parsley, chopped (for garnish)
- Salt and black pepper, to taste
- 3.5 oz (100g) mozzarella cheese, shredded
Instructions
- Peel and boil the potatoes until soft. Drain and mash them.
- Add butter, salt, smoked paprika, black pepper, and oregano to the mashed potatoes. Mix well.
- In a skillet, cook the ground beef until browned. Drain excess fat.
- Add onion, garlic, red bell pepper, and tomato to the skillet. Cook until softened.
- Stir in tomato paste, salt, and black pepper. Cook for a few more minutes.
- Preheat the oven to 375°F (190°C).
- Form the mashed potatoes into nests on a baking sheet.
- Fill each nest with the beef mixture.
- Top with shredded mozzarella cheese.
- Bake for 20-25 minutes or until the cheese is melted and golden.
Notes
- Garnish with fresh dill and parsley before serving.
- Adjust seasoning according to your taste.
- You can substitute ground beef with ground turkey or chicken.
