Description

Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup strawberry milk
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1/2 cup strawberry preserves or puree
  • 1/2 cup finely chopped fresh strawberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons strawberry milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the strawberry milk, sour cream, and vanilla extract.
  6. In another bowl, combine the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in the strawberry preserves and chopped strawberries.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake for 60-70 minutes or until a toothpick comes out clean.
  11. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. For the glaze, whisk together the powdered sugar, strawberry milk, vanilla extract, and pinch of salt until smooth.
  13. Drizzle the glaze over the cooled cake before serving.
