- 1/3 cup homemade thick strawberry jam
Instructions
- Prepare the strawberry jam by mixing diced strawberries and sugar in a saucepan over medium heat until thickened.
- In a bowl, beat cream cheese, sugar, and vanilla extract until smooth for the cheesecake filling.
- In another bowl, cream the butter and sugar for the cookie dough until fluffy.
- Add the egg and vanilla extract to the cookie dough mixture and mix well.
- Combine flour, baking powder, and salt; gradually add to the cookie dough mixture.
- Stir in the homemade strawberry jam into the cookie dough.
- Drop spoonfuls of dough onto a baking sheet, create a small well in the center.
- Fill the wells with cheesecake filling.
- Bake at 350°F (175°C) for 12-15 minutes or until edges are golden.
- Allow to cool before serving.
