Ingredients

  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup vegan butter, softened (for frosting)
  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together vegan butter, pumpkin puree, brown sugar, and granulated sugar.
  3. Add vanilla extract and mix well.
  4. In another bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until cookies are set.
  8. While the cookies cool, prepare the frosting by creaming vegan butter, vanilla paste, cinnamon, pumpkin pie spice, and brown sugar.
  9. Gradually add powdered sugar and mix until smooth.
  10. Frost cooled cookies with cinnamon frosting.
