Description

Ingredients

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the carrots in salted water for 10-15 minutes until tender.
  3. Drain the carrots and place them on a baking sheet.
  4. Use a fork or potato masher to gently smash each carrot.
  5. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
  6. Bake for 20 minutes until golden and crispy.
  7. Sprinkle with Parmesan cheese and return to the oven for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
