A simple slow cooker chicken recipe with potatoes and lemon.
Ingredients

- 1.5–2 lbs boneless, skinless chicken breast
- 2 large Idaho potatoes, diced
- 2 tbsp garlic-infused olive oil
- 2 large lemons, juiced
- 1/2 tbsp rosemary
- 1/2 tbsp oregano
- Dash of black pepper
Instructions
- Place chicken in the slow cooker.
- Add diced potatoes around the chicken.
- Drizzle garlic-infused olive oil over the chicken.
- Squeeze lemon juice over everything.
- Add rosemary, oregano, and black pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving if desired.

- Use fresh herbs for more flavor.
