Ingredients

  • 1 cup long grain rice
  • 1 lb shrimp (deveined)
  • 1 cup smoked sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tsp Cajun seasoning
  • 2 cups chicken broth
  • 2 green onions (chopped)
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Heat a large pot over medium heat.
  2. Add the smoked sausage and cook until browned.
  3. Add the onion, bell peppers, and garlic. Cook until softened.
  4. Stir in the Cajun seasoning and cook for 1 minute.
  5. Add the rice and chicken broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Add the shrimp and cook until pink and cooked through.
  8. Stir in green onions and parsley before serving.

Notes

  • Adjust the Cajun seasoning to taste.
  • Serve with hot sauce if desired.
