Description
A tangy and refreshing potato salad with a salt and vinegar twist.
Ingredients

- 2 lbs red potatoes, cubed
- 1/4 cup white vinegar
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh dill
- 1/4 cup finely chopped red onion
- 2 tbsp chopped chives
Instructions
- Boil the cubed red potatoes until tender.
- Drain the potatoes and let them cool.
- In a large bowl, mix the vinegar, olive oil, salt, and black pepper.
- Add the cooled potatoes to the bowl.
- Stir in the dill, red onion, and chives.
- Toss until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust seasoning to taste.
- This salad can be made a day ahead.
- Garnish with additional dill if desired.
