Description

A tangy and refreshing potato salad with a salt and vinegar twist.


Ingredients

  • 2 lbs red potatoes, cubed
  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh dill
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped chives

Instructions

  1. Boil the cubed red potatoes until tender.
  2. Drain the potatoes and let them cool.
  3. In a large bowl, mix the vinegar, olive oil, salt, and black pepper.
  4. Add the cooled potatoes to the bowl.
  5. Stir in the dill, red onion, and chives.
  6. Toss until well combined.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Adjust seasoning to taste.
  • This salad can be made a day ahead.
