Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds.
- In a bowl, mix olive oil, salt, black pepper, and smoked paprika.
- Toss the sweet potato rounds in the mixture until evenly coated.
- Arrange the rounds on a baking sheet in a single layer.

- Sprinkle crumbled feta cheese and chopped parsley on top before serving.
Notes
