Ingredients

  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup raspberries, fresh or frozen
  • 2 tbsp raspberry jam

Instructions

  1. Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pan to form the crust.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese and 3/4 cup sugar until smooth. Add eggs and vanilla, mixing well.
  5. Pour filling over the crust. Drop spoonfuls of raspberry jam and swirl with a knife.
  6. Scatter raspberries on top.
  7. Bake for 35-40 minutes until set. Cool completely before cutting into bars.
