  • 1/2 cup light brown sugar, packed
  • 2 large egg yolks, room temperature
  • 2 teaspoon vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup finely chopped chocolate bar or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the cold butter, granulated sugar, and brown sugar.
  3. Add pumpkin puree, egg yolks, and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the chopped chocolate or chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
