Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 garlic cloves, finely diced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried marjoram
  • 1 can (14 oz / 400g) crushed tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 4 oz pepperoni, quartered
  • 4 cups chicken stock
  • 68 fresh basil leaves
  • 4 oz mozzarella cheese, grated
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Add onion, green bell pepper, and garlic. Sauté until softened.
  4. Stir in oregano, basil, and marjoram.
  5. Add crushed tomatoes, tomato sauce, and sugar. Mix well.
  6. Pour in chicken stock and bring to a boil.
  7. Add pepperoni and fresh basil leaves.
  8. Simmer for 20 minutes.
  9. Season with salt and black pepper.
  10. Serve hot, topped with mozzarella cheese.
