A delicious pecan upside down cake with a rich caramel flavor.

- 1 yellow cake mix
- 1 pack instant vanilla pudding
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 stick butter (melted)
- 1 cup light brown sugar
- 1 cup pecans
- Non-stick baking spray
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan with non-stick baking spray.
- In a mixing bowl, combine the yellow cake mix, instant vanilla pudding, eggs, vegetable oil, and water.
- Mix until the batter is smooth.
- In another bowl, mix the melted butter and light brown sugar until combined.
- Spread the brown sugar mixture evenly in the bottom of the prepared pan.
- Sprinkle the pecans over the brown sugar mixture.
- Pour the cake batter over the pecans and brown sugar layer.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for a few minutes, then invert onto a serving plate.
